I have learned patience, for sure. Pre-publication is a long waiting game, especially for authors of picture books. We write the manuscript, sign the contract, and wait. It takes a while for the art director to find an illustrator and then the illustrator works on the sketches, and depending on those first round of sketches, it could be a few more months before you see a final illustration. I was surprised at how long it takes for all the pieces to come together.
I have a writing space in my apartment, but I prefer to write at coffee shops. When I'm stuck, I take a walk and spend time outside to clear my mind. I get inspired on these walks, often getting new ideas for stories and finding solutions to the problems that need to be fixed in the draft I am working on.
In my writing I hope to have a balance between the good and bad, the hard and soft.
Because I've always been more afraid of writing than I have of doing anything visually such as directing or acting.
If the chaos is overwhelming, I start making lists. To write it down puts it in perspective.
You wake up, your life is discipline: there's kids, breakfast, lunch box, go to work, discipline, organization, guests. Imagine the semi-final of Super Bowl. We have that every day: lunch and dinner. We play that game. Then you come home and you really just want to drink a beer. But then you discipline yourself and you have to do this thing, this journal. It was painful but I'm so happy I did it. I have newfound respect for people that write.
The traditional roots of Scandinavian cuisine are not that spectacular, to say the least. When we write about the traditions that we are inspired by, it's more techniques like smoking, preserving. Many of them are not made to make food delicious; they're just around so that you can make food last through the winter. There isn't a great deal of tradition to tap into.
I started to change. It was sort of a restaurant mid-life crisis, you could say. I lost a lot of confidence, not so much as a father or as a friend, but as a boss, as a chef that's to make decisions throughout the day all the time. I just slowly started burning out. Once you lose your confidence like that, you start being angry in the kitchen. I couldn't recognize myself anymore. I started writing the journal. It was never meant to be a book, but the editor at Phaidon read parts of it. As editors do, I guess.
It was tough to write. We had the shadow of "Lost" hanging around and I just kept saying, "Guys, we need to take a really wide birth around 'Lost.' We're going to get lots of comparisons anyway, but we need to prove, within a couple episodes, that it's not 'Lost.'"
When you're working on a television show with actors, what you hope you're doing is playing jazz with them all the time. You see what they're giving you, so you try to write back to that, and then they play with that, and you get a sense of what is going on. That's just a natural way in which TV series usually work.
Nobody should be anything, but because I once had a different profession and I'm interested in writing, I took it upon me.
Part of being a writer is knowing when what you write is really bad.
Writing a novel is always complicated, it's not like you snap your fingers and go, 'Ah, I know what I'll write'. For me, a lot of the time, I have to write and as I write, I learn about the story.
I love that I live a creative life. It is in the work that I do - acting, writing, and directing. It's also in the mindfulness of every part of my life, from a meal that I prepare for family and friends to putting my imagination to work in a garden.

I don't even think anyone has realized, the long term is going to be the bigger revelation. It's incredible how quickly she writes songs. We've hung out a couple times, we live near each other in Nashville.
